Roasted Pork Butt


We visited our butcher, Phil yesterday and asked for pork butt--the kind that when you eat it, the fat dribbles down your chin.  He smiled and asked Bob if he had ever roasted a pork butt before.  Bob gave a resounding "no".  Bless his heart, Phil gave Bob a really simple recipe.  Wrap butt in foil, set oven temp to 300 and roast for at least 8 hours.  It just came out of the oven.  YUMMY!  Just like I imagined.  Pork fat was rendered and the skin was crunchy.  Chef Extraordinaire's recipe for Roasted Pork Butt
